Here’s a great brunch idea: this scrambled tofu is the perfect start to the weekend. If you like it hearty, fry a few slices of smoked tofu for a veganised, classic “scrambled eggs with bacon”. DELICIOUS!!
* I use soy milk in this recipe, but of course you can use any other plant milk you like. I have tried many types of milk and have had the best experience with soy milk in terms of consistency and taste.
Ingredients
Für den Tofu Mix
- 200 g Tofu nature
- 2 g Kala Namak
- 1 TL turmeric (gehäufter)
- 1 EL Soy sauce (Strong)
- 1 Prise Oregano
- sweet paprika
- Pepper
Zum kochen
- 1 Tomato
- 1 onion or shallot
- 1 Avocado
- Soy milk * (En Gutsch)
- 2 EL yeast flakes
- coconut oil
- chives (zur Dekoration)

Instructions
- Crumble the tofu with your hands or mash it with a fork. Then add Kala Namak, turmeric, soy sauce and spices and mix. Set aside.
- Finely chop the onion and tomato. Dice the avocado.
- Fry the onions in the oil. Then add the tofu mixture and continue frying until it browns a little.
- Add the tomatoes and continue to fry briefly, then deglaze everything with the soy milk - use as much liquid as you need until you get an "eggy" consistency.
- Simmer on a low heat for a few minutes. Then add the avocado and simmer for another 1 to 2 minutes. (Not too long and not too hot, otherwise the avocado can become bitter). If necessary, add a little more vegetable milk.
- Finally, mix in the yeast flakes, optionally garnish with some fresh chives and serve immediately.
