In many parts of the world, millet is popular for its nutritional value. Brown millet has a lovely copper-colored rind that is easy to chew due to the sprouting. As a protein and fiber-rich topping, it is ideal for your muesli or porridge. Of course you can eat the germinated seeds directly.
The inhibitors contained in the brown millet are broken down as a result of the germination, the carbohydrates are partly converted into easily digestible sugars and the protein is also broken down into amino acids. Germination further improves the already excellent properties of brown millet. The vitamin content is increased four to six times in the germination stage, the mineral and trace element content as well as the valuable monounsaturated and polyunsaturated fatty acids increase, the germ buds are easier to digest. Its taste has a nutty, mildly spicy sweetness and is vaguely reminiscent of watercress.
